Almond Crusted Tilapia!!!

Ingredients

1  cup  sliced almonds, divided

1/4  cup  all-purpose flour

4  (6-oz.) tilapia fillets

1/2  teaspoon  salt

2  tablespoons  butter

2  tablespoons  olive oil

Preparation

1. Process 1/2 cup almonds in a food processor until finely chopped, and combine with 1/4 cup flour in a shallow bowl.

2. Sprinkle fish evenly with salt; dredge in almond mixture.

3. Melt butter with olive oil in a large heavy skillet over medium heat; add fish, and cook 4 minutes on each side or until golden. Remove fillets to a serving plate.

4. Add remaining 1/2 cup almonds to skillet, and cook, stirring often, 1 minute or until golden. Remove almonds with a slotted spoon, and sprinkle over fish.

 

I found this recipe in Southern Living and tried it for dinner the other night! It was so delicious I

thought I would share it with you. I served it with a huge mixed green salad and some kalamata

olive bread from our local market. My family loved it!

WooHooness!!!

I know I am probably late to the game in trying this fabulous frozen yogurt deliciousness...but oh

my goodness this stuff is yuuuummmmyyyy!!! My daughter and I tried it for the first time about a

month ago and it has become a regular stop on our days out! I always get coconut with

strawberries, honey roasted sunflower seeds and yogurt chips and on this day my daughter got

chocolate with fruity pebbles. Again...yuuuummmmyyyy!!! I have had other kinds of frozen

yogurt but his hands down the best in the world...I am serious...the best!!! It makes you want to

go WOOHOO;)!!!

If ya'll have one near you and haven't tried it yet...run...don't walk and get you some...what are

you waiting for...GO;)!!!

My Little Stool and Other Goodies!!!

I know ya'll have been dying to see my little stool I bought at Ballard and Blakely the other day;)!

Isn't it the cutest! I love it! Apple green, brown and pink...I fell in love! The needlepoint is vintage

as well as the trim but I think the legs are just old. I had to put it on my barstool to get a good pic.

The other photos are of goodies I bought on the same day...I couldn't leave with only one

thing...not me;)! The iron topiary thingy...hehe...on a chest in my dining room is from B and B

too. I love the shape and size...it adds so much to the little vignette. The other iron thingys...also

came home with me...they don't have a home yet but I wanted to share them with you anyway. I

adore this shop and plan on making it a regular stop on my shopping trips! I hope ya'll like all my

goodies. Aren't they cuuuuute?!

My precious little girl just turned 21! Oh my...the time flies too quickly! My husband and I celebrated by taking her to dinner at one of our favorite places...Nick and Sam's Grill. I am so proud of the young woman she has become...she is my middle child and the only girl and I ADORE her! She is my best friend and I might be a little bias but I consider myself the luckiest mom in the world to have such an amazing child!

Happy Birthday darling girl...we both love you VERY much!
