Summer Salad Saturday!!!

Greek Salad

Ingredients

3 vine ripe tomatoes, cut into chunks

1 red onion, thinly sliced

1/2 European seedless cucumber, cut into bite-size chunks

1 small red bell pepper, seeded and chunked

1 small green bell pepper, seeded and chunked

1 cubanelle pepper, seeded and chunked

1 cup Kalamata black olives

Several sprigs fresh flat-leaf parsley, about 1/2 cup

2 (1/4 pound) slices imported Greek feta

1/4 cup extra-virgin olive oil

3 tablespoons red wine vinegar

1 teaspoon dried oregano, crushed in palm of your hand

Coarse salt and black pepper

Pita breads

Directions

Combine vegetables, olives, and parsley in a large bowl. Rest sliced feta on the top of

salad. Combine oil, vinegar, and oregano in a small plastic container with a lid. Shake

vigorously to combine oil and vinegar and pour over salad and cheese. Season with salt

and pepper and let the salad marinate until ready to serve. Serve salad with pita bread

blistered and warmed on a hot griddle or grill pan.

You had asked about some of the items in my post. The dishes are from jcpenney.com (on sale!). The napkins are from Pottery Barn. The coral napkin rings are by Jay Strongwater, but I think they're discontinued.

Yum! I love Greek salads, too! I try to keep the ingredients for them on hand, so I can make them during the week for lunch. I have been using sliced black olives on mine, but I am going to look for Kalamata olives next time I go to the grocery store.

Another one of your gorgeous mosaics and a great summer supper idea, too! Greek salad is a favorite of mine, but my family did not like feta. The solution for me was to try French Feta which I had learned was milder, creamier and less salty. Now I can get the whole family to eat it and I just need to work on trying to get mine to look as pretty as yours. ~J~ @French-Kissed.com

Hey sounds yummy! I always go to a Greek restaurant down here and get a Greek salad LOL. Do you remember Apollonia next to the Bristol Farms and Roys? Across from UTC? I don't know how long it's been there...lol. Good food though!

Man another late night munchie I'm craving. Have you ever tried the smaller Persian cucumbers. There crunchier and a cleaner taste..in other words YUM!!
