YUMMY!!!

 

I made this chicken the other night and it was amazing. I saw Paula Deen make it on her show

and thought I would give it a whirl. You have to try…it it is YUMMY!!! It is a great alternative to

the mess of frying chicken…so easy…and YUMMY!!! Did I say it was YUMMY…lol!!!

Oven Fried Chicken

2 cups Panko bread crumbs

1 cup grated Parmesan

4 tablespoons olive oil, divided

2 tablespoons freshly minced thyme leaves

Kosher salt and freshly ground black pepper

1/4 cup Dijon mustard

2 tablespoons water

2 1/2 pounds boneless skinless chicken breasts, pounded to 1/4 -inch thickness

Directions

Preheat oven to 400 degrees F. Line a baking sheet with heavy-duty aluminum foil. Place a

cooling rack over pan and spray rack with nonstick cooking spray.

In a shallow dish, combine bread crumbs, cheese, 2 tablespoons olive oil, thyme, salt and pepper,

to taste. In a separate shallow dish, combine mustard, water, salt and pepper, to taste, and

remaining olive oil. Coat each chicken breast with mustard mixture; dredge each in bread crumb

mixture. Place on prepared rack in pan. Bake for 25 to 30 minutes, or until chicken is golden

brown. Serve immediately.

Cook Time 30 min

Level Easy

Yield 4 servings

Since fried chicken is one of my favorite things to eat and one of my least favorite things to make, I will definitely give this recipe a try. No fying, and it uses olive oil...do you think this might actually be good for us!!!? I am going to answer that with a "Yes" and make it for dinner tonight!

This looks amazing! I've never used Panko breadcrumbs before. I don't know that I'ver ever SEEN Panko breadcrumbs before!LOL! Good excuse to go to Central Market.:)

Ooooo this really does sound yummy Cathy! But I had never heard of Panko breadcrumbs, so I googled it and found some easy recipes to make your own if it's not available at the market!

Hi Cathy. I've been wanting to try that recipe. I make a very similar recipe that just uses flour instead of Panko. Glad to hear the good review. :) Now I just have to find some Panko...seems like PD says it's in the Asian section of the store.

We try out her recipes on a regular basis. Funny story about her...my husband says he deserves royalties for discovering her! He worked for Hoffman Publishing (the company that publishes Paula's magazine), and said that in the mid to late 90's, he visited Savannah, went to her restaurant, and came back to work and to the publisher exclaiming his praises. He told Phyllis, the publisher, "You REALLY need to do an article on this woman ... and maybe a cooking magazine!" Ha! Years later, Phyllis took this advice and the rest is history! He tells her on a regular basis he is awaiting his royalty checks in the mail. :-) Anyway, we ADORE her recipes!

I'll have to try the parmesan! I always use panko mixed with Italian breadcrumbs for oven friend chicken but the parmesan sounds like it would be a nice addition.

I use Miracle Whip because some in my family don't like mustard.

All my little GS will eat is Chicken Nuggets and I can make these in little squares for him. I am laughing as Paula must have been dieting when she made these as they are not fried like most of her recipes. We go to Savannah about 6 times a year and we can never get into her place to eat. Always a huge line and reservations in person only. We look thru the window and it always looks like a great buffet. I do get to visit her gift shop. Her brother had a place just before you get onto Tybee Island that we keep driving past which we hear is also good but every time we drive past we seem to be dieting and keep on driving:) Thanks for sharing the recipe.
